STEP BY STEP

Let's make something delicious.

  1. 01

Wash the chicken breast, pat dry with a kitchen towel, dice and sear in a little rapeseed oil.

  2. 02

Peel the onions, cut into thin strips and fry with the chicken breast.

  3. 03

Add the cayenne pepper and deglaze with the vegetable stock. Peel and dice the potatoes and carrots.

  4. 04

Trim and deseed the pepper, then cut into strips. Remove the stalk cores from the tomatoes and quarter them. Add the vegetables to the stock and simmer over a medium heat for 15 minutes. Peel the garlic and use a garlic press to press it into the simmering vegetables.

  5. 05

Stir in the peanut butter and simmer for a further 15 minutes. Toast the peanuts in a non-stick frying pan without added fat over a medium heat for about 5 minutes.

  6. 06

Cut the chilli into thin strips and add to the peanuts. Serve the finished stew, garnished with the roasted chilli peanuts and spring onions.
