STEP BY STEP

Let's make something delicious.

  1. 01

Season the orange juice with one tsp of salt and bring to the boil on the hob.

  2. 02

Pour the boiling orange juice over the dry couscous in a bowl and stir with a spoon. Cover with cling film and leave to absorb the liquid for 10 minutes.

  3. 03

Process the cauliflower in a food processor until finely grained. Crumble the feta with your hands and knead with the remaining ingredients to form a dough. Refrigerate the dough for 20 minutes.

  4. 04

Preheat the oven to 160 °C fan or 170 °C conventional. Shape the dough into 10-12 patties and fry in a non-stick pan until golden.

  5. 05

Finish cooking the patties in the oven for 10 minutes.

  6. 06

While the patties bake, pick the basil leaves and toast the sunflower seeds in a non-stick pan without added fat. Purée the basil and toasted sunflower seeds with the olive oil to make a paste.

  7. 07

The finished patties can be enjoyed cold or warm.
