STEP BY STEP

Let's make something delicious.

  1. 01

Divide the cauliflower into florets and cook in salted water until soft. Drain well in a colander, then roughly chop.

  2. 02

Mix the eggs, flour, salt and pepper in a bowl until smooth. Fold in the cauliflower. Chop the parsley.

  3. 03

Halve the red pepper and remove the stalk, seeds and white membranes. Cut the flesh into very small pieces. Stir the parsley, chives and cheese into the batter.

  4. 04

Heat the oil in a large non-stick frying pan. Using a tablespoon, spoon the batter into the pan to make 12 fritters and flatten slightly. Fry over a medium heat for 3–4 minutes on each side.

  5. 05

For the dip, halve the chilli, remove the stalk, seeds and membranes, then finely chop the flesh. Peel and finely dice the garlic. Trim the spring onions and slice into thin rings. Finely slice the mint. Mix everything in a bowl with the yoghurt, lemon juice, salt and pepper.

  6. 06

Plate up the cauliflower fritters with the dip and serve.
