STEP BY STEP

Let's make something delicious.

  1. 01

Trim the beans and boil for 10 minutes, then rinse under cold water. Cut the broccoli into florets, boil for 5 minutes and rinse under ice-cold water.

  2. 02

For the dressing, peel and roughly chop the garlic. Pick the mint leaves from their sprigs. Rinse the lemon under hot water, pat dry and finely grate the zest. Squeeze out the juice. Put the cream, mustard, lemon juice, lemon zest, garlic, half the mint leaves, salt and pepper into a tall container and blend until smooth with a hand blender.

  3. 03

Toast the pine nuts in a frying pan with 1 tbsp oil. Lightly salt them and remove from the pan. Cut the baguette into paper-thin slices, for example using a food slicer. Heat 3 tbsp oil and toast the bread slices on both sides. Leave to cool, then break into rough pieces.

  4. 04

Mix the beans, broccoli, dressing and remaining mint leaves thoroughly. Adjust the seasoning with salt and pepper. Scatter the baguette chips and pine nuts over the top.
