STEP BY STEP

Let's make something delicious.

  1. 01

Bring 1.25 litres of vegetable stock to the boil. Add the beef, return to the boil and continue cooking over the lowest heat for 15 minutes.

  2. 02

Meanwhile, peel and dice the beetroot, celery and potatoes. Cut the white cabbage and onion into strips.

  3. 03

Heat the oil in another saucepan and gently sauté the vegetables. Add the chopped tomatoes and season with caraway seeds, salt and pepper. Add the vegetables to the beef and stock, cover and continue cooking over a low heat for approximately 30 minutes. Remove the beef, cut it into small pieces and return it to the soup.

  4. 04

Season the stew to taste with salt and pepper. Serve with a dollop of soured cream on each portion and crisp toasted wholemeal bread alongside.
