STEP BY STEP

Let's make something delicious.

  1. 01

Trim the spring onions and cut into thin rings. Clean the chanterelles and cut into small pieces. Halve the pepper, remove the stalk, seeds and white membranes, then finely dice the flesh. Briefly blanch the tomatoes, refresh in cold water, peel and halve. Remove the stalk cores and seeds, then finely dice the flesh. Wash the parsley and basil, spin dry and finely chop.

  2. 02

Heat the olive oil for the topping in a frying pan and fry the chanterelles over a high heat. Add the spring onions and fry briefly. Season with salt and pepper. Add the diced pepper and tomatoes and fry for 2 minutes. Stir in the herbs and keep warm.

  3. 03

Place the bread slices on a baking tray. Peel the garlic and crush it using a garlic press. Mix with the olive oil for the bread and brush over the slices. Toast in a preheated oven at 200 °C conventional (180 °C fan) for about 5 minutes.

  4. 04

Remove the bread slices from the oven and arrange on a platter. Spoon the chanterelle mixture over the bread. Garnish with parsley leaves and serve.
