STEP BY STEP

Let's make something delicious.

  1. 01

Cut the carrots into batons. Divide the broccoli into small florets. Slice the spring onions.

  2. 02

Halve the tomatoes. Drain and rinse the chickpeas. Thinly slice the garlic.

  3. 03

Add the olive oil to a frying pan. Gently toast the spices and garlic in the oil for 1 minute. Add the carrots, broccoli, spring onions and tomatoes and fry for 1 more minute. Pour in the vegetable stock and cook for 8 minutes.

  4. 04

Meanwhile, finely chop the mint and squeeze the lemon for the dressing. Stir together all the dressing ingredients, including the lemon juice.

  5. 05

After the 8 minutes of cooking, add the couscous and chickpeas to the vegetables and remove the pan from the heat. Leave to stand for 5–8 minutes, then season with pepper and salt. Finally, crumble the feta with your fingers, chop the parsley and fold both into the couscous. Serve with the yoghurt and mint dressing.
