STEP BY STEP

Let's make something delicious.

  1. 01

Trim the kale, wash thoroughly and drain. Remove the central stalk with a sharp knife and cut out the ribs from the leaves (yielding approx. 400 g). Cut the leaves into thin strips. Blanch briefly in boiling salted water, refresh in cold water and drain well.

  2. 02

Peel the onions and cut into wedges. Peel the ginger and slice very thinly. Cut the Kasseler into cubes about 1.5 cm in size.

  3. 03

Heat the oil in a large saucepan. Sauté the onions and ginger over a medium heat. Add the kale and sauté for 5 minutes, turning regularly. Add the diced Kasseler and pour in the vegetable stock. Cover and cook over a reduced heat for 30 minutes.

  4. 04

Meanwhile, peel the sweet potatoes and parsley root. Cut the sweet potatoes into 2 cm cubes and the parsley root into 1 cm cubes. After 30 minutes, add both to the kale and cook for a further 20 minutes.

  5. 05

Wash, quarter and core the apples, then cut into wedges. Rinse the lemon under hot water, grate the zest and squeeze out the juice. Immediately drizzle the lemon juice over the apples and add them to the stew for the last 5 minutes of cooking. Season with salt, pepper and lemon zest, then dish up and serve.
