STEP BY STEP

Let's make something delicious.

  1. 01

Sift the flour into a bowl and make a well in the centre. Crumble the yeast into the well. Dissolve the sugar in 300 ml lukewarm water and pour into the well. Leave to rest for 5 minutes.

  2. 02

Work in the flour from the edges and knead into a smooth, supple dough. Gradually sprinkle in the salt. Cover and leave to rise in a warm place for 1 hour.

  3. 03

Knead the dough again by hand. Shape into 12 equal-sized pieces and place on a baking tray lined with baking parchment. Leave to rest for a further hour.

  4. 04

Preheat the oven to 200 °C fan (220 °C conventional). Grease a muffin tin with room-temperature butter.

  5. 05

Bring 1 litre of water and the bicarbonate of soda to the boil in a saucepan. Remove the pan from the heat. Using a slotted spoon, dip the dough pieces into the bicarbonate of soda solution one at a time for 30 seconds, then drain and place in the wells of the muffin tin. Top three dough pieces each with sesame seeds, pumpkin seeds, sunflower seeds and poppy seeds. Sprinkle with a little coarse salt as well, if liked.

  6. 06

Bake the pretzel rolls on the middle shelf for 15 minutes. Remove and leave to cool. Serve with butter or cream cheese.

A serving uses the portion size recorded in the recipe; changing the number of servings does not change the values per serving.
