STEP BY STEP

Let's make something delicious.

  1. 01

Put the lentils and bay leaf in a saucepan. Add enough water to cover the lentils by 2 cm. Cook for approximately 20–25 minutes until tender. Drain in a sieve, rinse with cold water and leave to drain well. Remove the bay leaf.

  2. 02

Wash and quarter the cherry tomatoes, removing the stem ends. Peel the carrots, cut into slices, then quarter the slices. Peel and finely chop the onion, and dice the feta. Put the lentils, tomatoes, carrots, feta and onion in a bowl. Finely chop the parsley, chives and mint and add to the bowl.

  3. 03

For the vinaigrette, stir all the ingredients together. Pour over the salad, mix well and leave to marinate for one hour.

  4. 04

Taste again, adjust the seasoning and serve.
