STEP BY STEP

Let's make something delicious.

  1. 01

Wash the lemon in hot water, rub dry and finely grate half the zest. Halve the lemon and squeeze out the juice.

  2. 02

Finely dice the matjes herring fillets. Peel and halve the onions. Finely dice 3 onion halves and cut the fourth half into thin strips for the garnish. Wash, quarter and core the apples, then finely dice.

  3. 03

Place the diced herring, onion and apple in a bowl and drizzle with the lemon juice. Add the mustard, salt, pepper, lemon zest and both oils, then mix well.

  4. 04

Finely crumble the pumpernickel slices. Place a cooking ring (12 cm Ø) on a plate, add a quarter of the pumpernickel crumbs and press down lightly. Spoon a quarter of the herring tartare mixture on top, then carefully lift off the metal ring. Arrange the remaining crumbs and tartare in the same way.

  5. 05

Snip the cress from its tray in 4 small bunches, rinse and pat dry. Garnish each herring tartare with a few onion strips and a small bunch of cress, then serve.
