STEP BY STEP

Let's make something delicious.

  1. 01

Peel the potatoes and cut them into thick, chip-shaped strips.

  2. 02

Put the potatoes in a saucepan, cover with water and bring to the boil.

  3. 03

Once the potatoes are tender, drain and leave to cool.

  4. 04

Divide the meat into portions and place in a preheated griddle pan, or use a non-stick frying pan. Press down gently and grill for about 2 minutes on each side until a golden-brown crust forms.

  5. 05

Remove the grilled steak from the pan and wrap in baking parchment.

  6. 06

Bring the milk to the boil and stir in the wasabi. Add the peas and butter and boil briefly.

  7. 07

Remove the saucepan containing the boiling milk, wasabi and pea mixture from the heat. Purée everything with a hand blender.

  8. 08

Once the peas are evenly puréed, adjust the seasoning, cover the saucepan and set aside.

  9. 09

Cook the wrapped steak in a preheated oven at 180 °C for about 9 minutes for medium. For well-done steak, leave it in the oven for 12–15 minutes.

  10. 10

Coat the chips in starch on both sides, shake off any excess and deep-fry in hot vegetable fat. Drain on kitchen paper.

  11. 11

Remove the cooked steak from the oven and leave to rest for about 2 minutes before plating. Season with the coarse sea salt. Serve the wasabi pea mash with the chips and steak.
