Crisp tempura chicken, red cabbage salad and lime mayonnaise between slices of homemade spelt and walnut bread.
STEP BY STEP
Put the spelt flour in a mixing bowl and loosen it with a whisk. Put the yeast, sugar and 300 ml water in a measuring jug and stir until the sugar and yeast have dissolved completely.
Toast the walnuts in a non-stick frying pan without any fat for 3–5 min.
Knead the yeast mixture, a tsp of salt and the walnuts into the spelt flour.
Place a metal bowl of cold water on the oven floor. Grease a loaf tin and dust it with flour. Put the dough in the tin and leave to rise in a warm place for 30 min. Brush with water and leave to rise for another 15 minutes. Then preheat the oven to 225 °C conventional heat and bake the bread on the middle shelf for 20 min. Brush with water again, sprinkle over the spelt flakes and bake for another 20 min.
Leave the bread to cool slightly, then turn it out of the tin while still warm.
Cut the chicken breast fillet into bite-sized pieces. Prepare the tempura batter according to the packet instructions. Stir the sesame seeds into the batter and turn the chicken in it to coat.
Fill a large saucepan with enough sunflower oil for deep-frying, or use a deep-fat fryer. Heat the oil to 175 °C and deep-fry the chicken for 6–10 minutes until golden brown.
For the lime mayonnaise, put the egg yolk, mustard and basil leaves in a measuring jug and blend until smooth using a hand blender. Gradually add the olive oil. Rinse the lime under hot water, pat dry, grate the zest and squeeze out the juice. Season the mayonnaise with the lime zest and juice.
Very finely shred the red cabbage using a mandoline or knife and put it in a mixing bowl. Mix with your hands, pressing firmly as you do so. Season with a teaspoon of lime mayonnaise, the parsley, salt and pepper.
Slice the bread and top the slices with lettuce, avocado, pea shoots, chicken and red cabbage. Spread the top slice generously with lime mayonnaise and close the sandwich.
