STEP BY STEP

Let's make something delicious.

  1. 01

Remove the membrane from the spare ribs. Season the ribs with salt and pepper.

  2. 02

Soak the applewood chunks in water. Then place them directly on the barbecue embers.

  3. 03

Cook the spare ribs bone-side down for 3 hours over indirect heat at a maximum of 110 °C.

  4. 04

After the 3 hours, remove the spare ribs from the barbecue or smoker. Soak parchment paper in a bowl. Gently squeeze out the paper, leaving some liquid in it. Wrap the ribs in the paper and cook on the barbecue for a further 2 hours over indirect heat.

  5. 05

After the 2 hours, unwrap the spare ribs and brush with barbecue sauce. Continue cooking for 1 hour over indirect heat, glazing again 1–2 times if needed. Serve.
