STEP BY STEP

Let's make something delicious.

  1. 01

Pour 400 ml boiling water over the bulgur, stir and leave to soak for 10 minutes until all the liquid has been absorbed. Leave to cool.

  2. 02

Wash and finely chop the mint, parsley and spring onions. Halve the red tomatoes, remove the stalk bases and seeds, and finely dice the flesh. Halve the cucumber lengthways, scrape out the seeds with a teaspoon and finely dice the flesh.

  3. 03

Mix the dressing ingredients together thoroughly.

  4. 04

Put the bulgur, diced tomatoes and cucumber, spring onions, herbs and olives in a large bowl. Add the dressing, mix gently and leave for 20 minutes to allow the flavours to develop. Adjust the seasoning.

  5. 05

Peel the prawns. Heat the oil in a frying pan, fry the prawns for 2-3 minutes and season.

  6. 06

Halve the yellow tomato, remove the stalk base and seeds, and finely dice the flesh. Arrange the salad and garnish with the diced yellow tomato, prawns and mint.
