STEP BY STEP

Let's make something delicious.

  1. 01

Clean the mushrooms and cut into thin slices. Wash and trim the beans, then cut into small pieces. Blanch in boiling salted water for about 8 minutes. After about 5 minutes, add the broccoli and finish cooking together. Drain, rinse with ice-cold water and leave to drain.

  2. 02

Peel and finely chop the ginger. Put the curry paste, coconut milk, vegetable stock and ginger in a saucepan and bring to the boil. Simmer gently for 5–10 minutes.

  3. 03

Cook the noodles according to the packet instructions and, if you like, cut into shorter lengths with scissors. Add to the curry and season to taste with lime juice, palm sugar and soy sauce. Bring back to the boil.

  4. 04

Wash and trim the chillies, then slice into thin rings. Rinse the coriander and shake dry. Divide the broccoli, beans and mushrooms between four bowls. Pour the hot curry over them. Serve sprinkled with coriander, chilli rings and nigella seeds.
