STEP BY STEP

Let's make something delicious.

  1. 01

Wash the apples, pepper, chives, iceberg lettuce and cucumber, then pat or shake dry as appropriate. Halve the avocados, remove the stones and scoop the flesh into a bowl.

  2. 02

Slice the apples around the cores and place in a bowl. Roll the limes on a chopping board and halve them. Squeeze three quarters of the juice over the avocados and add ¼ of the juice to the apple slices.

  3. 03

Mash the avocado flesh with a fork. Finely snip the chives and add to the avocado. Drain the tuna, add it to the avocado mixture and mix thoroughly. Season to taste with salt and add the chilli sauce.

  4. 04

Deseed the pepper and cut into strips. Thinly slice the cucumber.

  5. 05

Heat a frying pan and toast the bread in batches for 1–2 minutes per batch, turning until golden brown. Toast several slices at a time.

  6. 06

Spread half the toast slices with the avocado and tuna mixture and the other half with cream cheese. Arrange the cucumber slices, pepper strips, apple slices and iceberg lettuce on the 8 avocado toast slices. Place the remaining 8 cream cheese toast slices on top, spread-side down. Cut the sandwiches in half diagonally.

  7. 07

Serve the sandwiches with a cool drink.
