STEP BY STEP

Let's make something delicious.

  1. 01

For the chilli ketchup, rinse the lemon under hot water, grate the zest and squeeze out the juice. Mix all the ketchup ingredients in a bowl.

  2. 02

For the avocado cream, wash the basil, shake dry and finely slice the leaves. Halve and stone the avocados, then scoop out the flesh with a tablespoon. Blend with lemon juice and cashew butter, or mash with a fork. Fold in the basil and season with salt and pepper.

  3. 03

For the burgers, mash the tofu with a fork. Peel and finely chop the onions. Halve, deseed, wash and finely chop the pepper. Heat 2 tbsp olive oil in a frying pan. Fry the onions and pepper for about 5 minutes. Combine the contents of the pan with the tofu, breadcrumbs, mustard, 3 tbsp water, paprika, locust bean gum and salt. Knead into a mixture and season with pepper. Shape the mixture into burger patties. Fry in 2 tbsp hot olive oil over a medium heat for about 4 minutes on each side. Drain on kitchen paper.

  4. 04

Wash the lettuce and spin dry. Peel the onions and cut into rings. Wash the cucumber and tomato and cut into slices. Layer the bottom halves of the buns with chilli ketchup, lettuce, tofu patties, avocado and basil cream, onion rings, cucumber slices and tomato slices. Place the top halves of the buns on top.
