STEP BY STEP

Let's make something delicious.

  1. 01

Preheat the oven to 180 °C with top and bottom heat.

  2. 02

Peel the potatoes and carrots and cut into thin slices. Divide the broccoli into florets. Finely chop the onion and garlic.

  3. 03

Boil the potatoes, carrots and broccoli in salted water until tender.

  4. 04

For the sauce, sweat the chopped onion and garlic in a frying pan with a little olive oil until translucent. Halve and stone the avocados, then add the flesh to the pan. Add the vegetable stock, oat milk and cooking cream, then blend with a stick blender until creamy. Season with salt and pepper.

  5. 05

Roughly chop the almonds with a knife.

  6. 06

Put the cooked potatoes, carrots and broccoli in a baking dish. Spread the avocado sauce evenly over the vegetables. Sprinkle with the grated vegan cheese and chopped almonds.

  7. 07

Bake in the preheated oven for about 15 minutes, until the top is lightly browned and crisp.
