STEP BY STEP

Let's make something delicious.

  1. 01

Peel and finely chop the onion and garlic. Peel and trim the carrots, then cut into small dice or thin slices. Peel and wash the potatoes, then cut into small cubes. Tip the beans into a sieve and leave to drain.

  2. 02

Heat the olive oil in a saucepan. Add the onion and garlic and sweat until translucent. Add the carrots and potatoes and fry for 5 minutes. Add the beans and pour in the vegetable stock. Simmer uncovered over a medium heat for 20 minutes.

  3. 03

Slice the frankfurters and add them to the stew with the oregano, thyme and Dijon mustard. Simmer for a further 10 minutes.

  4. 04

Wash the parsley, shake dry and finely chop. Add to the stew. Season to taste with salt and pepper and serve.
