STEP BY STEP

Let's make something delicious.

  1. 01

Place the chickpeas in a sieve, rinse under cold water and drain. Peel and roughly chop the garlic. Rinse the lemon under hot water, pat dry, finely grate 1 tsp of zest and squeeze out the juice.

  2. 02

Place the chickpeas, garlic, lemon zest, 2 tsp lemon juice, tahini and olive oil in a tall blending jug and blend until smooth with a hand blender. Season with cumin, salt and pepper.

  3. 03

Wash and trim the spring onions, then slice into rings on the diagonal. Halve the avocados, remove the stones and cut the flesh into thin wedges. Wash the parsley, shake dry, pick off the leaves and roughly chop.

  4. 04

Spread the bread slices with hummus and top with the avocado slices. Sprinkle with the spring onions and parsley, then drizzle with a little lemon juice. Season with salt and pepper and serve.

A serving uses the portion size recorded in the recipe; changing the number of servings does not change the values per serving.
