STEP BY STEP

Let's make something delicious.

  1. 01

Cook the spaghetti in plenty of salted water according to the packet instructions until al dente. Reserve 200 ml of the cooking water, then drain the pasta well.

  2. 02

While the pasta is cooking, put the flesh of the ripe avocados in a blender. Add 100 g Parmesan, the lemon juice, 1 pinch of salt, a little black pepper and 100 ml of the cooking water, then blend into a smooth sauce.

  3. 03

Cut the pancetta into small pieces and thinly slice the garlic. Finely chop the parsley.

  4. 04

Fry the pancetta in a frying pan over a medium heat until crisp. Add the garlic and fry for a few minutes until lightly coloured.

  5. 05

Add the spaghetti and fry for 2 minutes.

  6. 06

Pour the avocado sauce over the pasta and mix well. Thin with the remaining cooking water until the sauce coats the pasta smoothly. Stir in the parsley and season with salt and pepper.

  7. 07

Divide the pasta between plates. Peel the firmer avocado and use a vegetable peeler to shave off a few ribbons. Arrange them on the pasta.

  8. 08

Sprinkle with the remaining Parmesan and serve.
