STEP BY STEP

Let's make something delicious.

  1. 01

Wash and roughly chop the wild garlic, then blend to a fine purée with two tbsp olive oil.

  2. 02

Put the vegetable stock and white wine in a saucepan and bring to the boil.

  3. 03

Heat the remaining olive oil in a separate saucepan. Finely dice the shallots and garlic, then gently sauté in the oil until translucent, stirring constantly.

  4. 04

Rinse the risotto rice in a sieve under running water, add it to the pan and sauté for 1 minute. Deglaze with two large ladlefuls of the vegetable stock and white wine mixture.

  5. 05

Cook the risotto rice over a medium heat for 20-25 minutes until it reaches the desired firmness. Keep adding the stock and wine mixture whenever the rice has fully absorbed the liquid. Stir gently from time to time without crushing the rice grains.

  6. 06

When the risotto rice is almost cooked, fold in the wild garlic purée and grated Parmesan.

  7. 07

Serve with extra Parmesan shavings, if desired.
