STEP BY STEP

Let's make something delicious.

  1. 01

Using a hand mixer, mix the salt, cinnamon, flour, coconut milk and honey into a pancake batter. Leave to rest for 1 hour.

  2. 02

Peel and slice the bananas. Stir the eggs into the batter. If the batter is too thick, mix in a little sparkling mineral water. Preheat the oven to 70 °C conventional (50 °C fan).

  3. 03

Heat a little sunflower oil in a medium-sized frying pan. Over a medium heat, spread ¼ of the banana slices over the pan and pour ¼ of the batter over them. Swirl the pan to spread the batter evenly. After a short time, flip the pancake and cook until the other side is also golden brown. Keep the pancake warm in the oven. Repeat with the remaining pancakes until all the batter has been used.

  4. 04

Meanwhile, briefly toast the coconut chips in a frying pan. Squeeze the lemon. Drizzle the pancakes with lemon juice and serve. Garnish with the toasted coconut chips, if desired.
