STEP BY STEP

Let's make something delicious.

  1. 01

Tip the sweetcorn and beans into a sieve, rinse under cold water and drain well. Remove the casing from the sausage and cut it into cubes about 1 cm in size. Halve the pepper, remove the stalk, seeds and white membranes, then finely dice the flesh. Wash the cherry tomatoes, remove the stalk ends and quarter the tomatoes. Trim the spring onions and slice into thin rings. Place everything in a bowl large enough to mix the salad.

  2. 02

For the dressing, mix 4 tbsp water with the vinegar, mustard and salt in a small bowl until the salt has dissolved. Stir in the pepper and oil, then add the chopped parsley.

  3. 03

Pour the dressing over the salad, toss to combine and leave in the fridge for about 15 minutes to allow the flavours to develop.

  4. 04

    Arrange the salad and serve.
