STEP BY STEP

Let's make something delicious.

  1. 01

Place the broccoli in a tall saucepan of boiling water with the stalks pointing upwards and blanch for 2-3 minutes. Remove, rinse under ice-cold water and drain. Separate the florets, then chop them in a food processor.

  2. 02

Peel and finely chop the onion and garlic cloves. Finely grate the mozzarella and Cheddar.

  3. 03

Place the broccoli, onion, garlic, mozzarella, Cheddar, ground almonds and eggs in a bowl and knead until evenly combined. Season with the tamari soy sauce, cayenne pepper and paprika. Leave to rest for 10 minutes.

  4. 04

Preheat the oven to 180 °C fan (200 °C conventional). Line a baking tray with baking paper.

  5. 05

Use two tablespoons to scoop the broccoli mixture into small nuggets and place them on the prepared baking tray, leaving plenty of space between them. Bake on the middle shelf for 20-25 minutes until golden brown.

  6. 06

Remove the broccoli nuggets from the oven and serve while still warm. A yoghurt and herb dip goes well with them.
