STEP BY STEP

Let's make something delicious.

  1. 01

Wash the broccoli and cut the florets off the stalk, cutting them smaller if necessary. Peel the stalk and cut it into thin slices.

  2. 02

Peel and wash the potatoes, then cut into 0.5–1 cm cubes. Trim and wash the spring onions, then shake dry. Slice the green parts into fine rings and refrigerate. Slice the white parts into rings as well. Wash the celery, remove the strings and finely slice the stalks. Wash the parsley, shake dry, pick off the leaves and finely chop.

  3. 03

Heat the butter in a saucepan. Gently sauté the spring onion whites and celery for about 1 minute. Add the broccoli and ¾ of the potatoes and fry for about 2 minutes. Pour in the stock and ¾ of the cream. Bring to the boil, then simmer over a low heat for about 10 minutes until the vegetables are soft.

  4. 04

Meanwhile, heat the oil in a frying pan. Fry the remaining potato cubes over a medium heat until golden brown all over. Season with salt and remove from the pan.

  5. 05

Stir the parsley into the soup and simmer for about 2 more minutes. Blend the broccoli soup until smooth using a hand blender. Season to taste with salt, pepper and lemon juice.

  6. 06

Ladle the broccoli soup into deep plates or bowls. Garnish with the remaining cream, fried potato cubes and spring onion greens, then serve.
