STEP BY STEP

Let's make something delicious.

  1. 01

Mix all the seasonings for the rub. Cut the chicken wings in half at the joint and place in a large bowl. Add the oil and massage the rub into the wings. Refrigerate for 2-3 hours.

  2. 02

For the buffalo sauce, put the sugar in a small saucepan and caramelise on the barbecue until light brown. Deglaze with 100 ml water (for 4 servings) and bring to the boil. Add the ketchup, chilli sauce, vinegar and seasonings, then simmer for 5 minutes. The sauce should thicken slightly. Season with salt and pepper.

  3. 03

Place the chicken wings on the barbecue in batches over indirect heat and brush with the buffalo sauce. Cook with the lid closed for 10 minutes, turn, brush with more sauce and cook for a further 10 minutes.

  4. 04

Meanwhile, for the blue cheese dip, put the mayonnaise, crème fraîche and yoghurt in a tall measuring jug. Roughly dice the blue cheese and add it to the jug. Crush the garlic clove and add it. Squeeze ½ lemon, add the juice and blend everything together. Keep the dip slightly chunky, leaving some larger pieces visible. Season with salt and pepper.
