A beef burger with goat’s milk Gouda, fresh salsa, jalapeños, coriander and crunchy tortilla chips in homemade chilli buns.
STEP BY STEP
Mix the milk, 250 ml warm water, yeast and sugar in a bowl and leave to rest for 5 minutes. Add the flour, chilli flakes, butter and egg. Knead for about 10 minutes until smooth and pliable, first using the dough hooks of a hand mixer, then by hand. Cover the dough and leave to rise for 2–3 hours.
Knead the dough thoroughly and shape into 6–8 buns. Place on a baking tray lined with baking parchment, cover with a cloth and leave to rise for another 1–2 hours. Preheat the oven to 200 °C with top and bottom heat. Brush the buns with egg yolk, sprinkle with chilli flakes and bake for 18–20 minutes until golden brown.
Remove the stalk cores from the tomatoes. Quarter and deseed the pepper. Finely chop the tomatoes and pepper with the chilli and parsley. Stir in the olive oil and season.
Season the minced beef generously with salt and pepper. Shape into 4 patties without pressing them together too firmly, then barbecue over direct heat for 3 minutes per side. Move the patties to the edge of the barbecue and top with the cheese slices, salsa and jalapeños. Halve 4 buns and warm them on the barbecue.
Spread the bottom bun half with thick soured cream. Top with coriander, a patty and tortilla chips. Place the top bun half on top.
