STEP BY STEP

Let's make something delicious.

  1. 01

Cook the mie noodles according to the packet instructions. Wash the Chinese cabbage and cut into thin strips. Add to the noodles for the final 3-4 minutes of cooking. Drain, reserving about 120 ml of the cooking water. Let the noodles and cabbage drain well.

  2. 02

For the sauce, crush the Sichuan peppercorns in a mortar and mix with the chilli flakes, chilli powder, five-spice powder and sesame oil. Season with the tahini and sugar.

  3. 03

For the topping, wash the spring onions and slice into thin rings. Peel and finely chop the garlic.

  4. 04

Heat the groundnut oil in a non-stick frying pan and gently sauté the garlic until translucent. Add the pork mince and fry, breaking it up into crumbs. Season with soy sauce. Wash the coriander, shake dry and pick off the leaves.

  5. 05

Put the noodles and cabbage in a large bowl. Mix the reserved cooking water with the sauce and fold into the noodles and cabbage. Divide between bowls and top with the pork mince, spring onions, peanuts and coriander.
