STEP BY STEP

Let's make something delicious.

  1. 01

Preheat the oven to 180 °C fan (200 °C conventional).

  2. 02

Wash the courgettes, trim the ends and cut into large cubes. Peel the carrots and potatoes and cut into large cubes. Wash the spring onions, trim the ends and cut into large pieces. Peel and finely chop the garlic. Wash the thyme, pat dry and strip off the leaves. Toss the vegetables with 3 tbsp olive oil, the garlic, thyme, salt and pepper. Spread over a baking tray lined with baking parchment and roast on the middle shelf for 20 minutes.

  3. 03

Rinse the cod fillets under cold water and pat dry with kitchen paper. Squeeze the lemon half. Wash the herbs, shake dry and finely chop. Mix the lemon juice, 1 tbsp olive oil and the herbs. Turn the cod fillets in the mixture and season with salt and pepper.

  4. 04

Heat the butter in a frying pan and fry the cod fillets on both sides for about 5 minutes. Arrange with the roasted vegetables and serve.
