STEP BY STEP

Let's make something delicious.

  1. 01

Peel the banana and mash thoroughly with a fork. Finely grind the oats in a food processor and mix with the wholemeal spelt flour. Whisk the eggs, mashed banana and almond butter together using an electric hand mixer. Slowly pour in the soya drink, stirring constantly. Gradually add the flour mixture and mix well.

  2. 02

Brush a crêpe pan with a little oil and wipe lightly with kitchen paper. Heat the pan and add a portion of batter using a ladle. Gently swirl the pan to spread the batter evenly and cook over a medium heat. Turn over and cook the other side until golden brown.

  3. 03

For the topping, wash the fruit. Halve the dragon fruit and cut the flesh into bite-sized pieces. Peel the mango and dice the flesh. Leave the raspberries to drain. Stir the low-fat quark, coconut milk and maple syrup together until smooth.

  4. 04

Place the coconut quark and fruit in the centre of the crêpes and roll them up. Garnish with desiccated coconut and almond butter, if desired, and serve.
