STEP BY STEP

Let's make something delicious.

  1. 01

Score the rind of the pork knuckle in a diamond pattern. Mix the salt, pepper, paprika and caraway seeds, then rub the mixture all over the knuckle.

  2. 02

Preheat the oven to 200 °C conventional (180 °C fan).

  3. 03

Peel or trim the vegetables as needed and cut into large pieces.

  4. 04

Heat the oil in a roasting tin, add the vegetables and fry briefly. Place the pork knuckle on top and pour in the meat stock. Transfer to the oven and roast for 30 minutes. Reduce the temperature to 180 °C conventional (160 °C fan) and roast for a further 90 minutes. Brush regularly with the beer and roasting juices.

  5. 05

Remove the pork knuckle from the oven and keep warm. Strain the sauce and reduce slightly. Mix the cornflour with a little cold water and use it to thicken the sauce. Adjust the seasoning.

  6. 06

Remove the pork from the bone, cut into pieces and serve with the sauce.
