STEP BY STEP

Let's make something delicious.

  1. 01

Melt the butter and leave to cool slightly. Finely grate the Parmesan. Pick the basil and parsley leaves from their stalks and roughly chop. Mix the butter thoroughly with the Parmesan and herbs.

  2. 02

Clean the mushrooms and halve if needed. Wash the tomatoes. Wash and trim the spring onions, then cut into pieces approx. 3 cm long. Mix everything in a bowl with the capers and olive oil. Season with salt and pepper.

  3. 03

Spread aluminium foil (or other foil suitable for grilling) on the work surface. Place the mushroom antipasti in the centre of each sheet. Spoon the Parmesan and herb butter over the top. Fold up the foil and twist to seal.

  4. 04

Cook the parcels on the barbecue over medium to high heat for approx. 8 minutes. Remove from the barbecue and place on a platter. Serve with baguette or ciabatta.
