STEP BY STEP

Let's make something delicious.

  1. 01

Cut the chicken breast fillets into cubes of about 1.5 cm. Peel and finely chop the onions. Halve the chilli lengthways, remove the stalk, seeds and membranes, then finely chop the flesh. Clean and halve the mushrooms.

  2. 02

Heat the oil in a frying pan. Brown the chicken on all sides and season with salt and pepper. Add the onions, chilli and mushrooms and fry together for a few minutes. Stir in the tomato purée and fry briefly. Add the chopped tomatoes and poultry stock and simmer for 15 minutes. Stir in the cream, finely chop the herbs and sprinkle them in. Simmer for a further 5 minutes, then check the seasoning.

  3. 03

Cut the white bread into cubes of about 1.5 cm. Toast briefly in a dry frying pan.

  4. 04

Transfer the chicken ragout to an ovenproof dish and spread the bread cubes over the top. Drain and dice the mozzarella, then scatter it over the bread. Drizzle with the olive oil and bake in a preheated oven at 180 °C for about 20 minutes.

  5. 05

Finely chop the herbs, sprinkle them over the chicken bake and serve.
