Succulent salmon and seasoned spinach wrapped in crisp puff pastry, served with a honey, mustard and dill sauce.
STEP BY STEP
Preheat the oven to 200 °C with top and bottom heat. Line a baking tray with baking paper. Trim and wash the spinach, then spin dry. Peel and finely dice the onion and garlic.
Heat the butter in a large, wide saucepan. Gently cook the onion and garlic until translucent. Add the spinach, cover and allow it to wilt, then cook gently for about 1 minute. Season generously with salt, pepper and nutmeg. Drain the spinach in a sieve or colander and squeeze out a little excess liquid if needed.
Pat the salmon dry with kitchen paper, check for bones and trim to fit if needed. Drizzle with lemon juice and season with salt.
Unroll the puff pastry onto the baking tray. Spread half the spinach evenly over one half of the pastry, leaving a 2–3 cm border. Place the salmon on the spinach and cover with the remaining spinach. Fold the other half of the pastry over the salmon. Tuck the edges underneath and press them together on the underside to seal.
Beat the egg yolk and brush it all over the pastry. Score the surface in a diamond pattern and sprinkle with sesame seeds. Bake the salmon on the middle shelf of the hot oven for 30–35 minutes.
Meanwhile, mix the honey and mustard for the sauce. Wash the dill, shake dry, chop very finely and stir into the honey and mustard mixture.
Remove the salmon in puff pastry from the oven, cut into pieces and serve with the honey, mustard and dill sauce. Serve with buttered rice if desired.
