STEP BY STEP

Let's make something delicious.

  1. 01

Put the beef mince in a bowl and season with marjoram, salt and pepper. Grate the Cheddar and mix it into the mince.

  2. 02

For the barbecue spice mix, combine the paprika, pepper, cayenne pepper, chilli flakes, onion powder and garlic powder. Work 3 tbsp (for 20 servings) of the spice mix into the mince.

  3. 03

Cut the mozzarella into 20 equal-sized cubes. Shape the mince mixture into 20 equal-sized balls. Press one mozzarella cube into the centre of each, enclose it with the mince and roll into a ball with damp hands.

  4. 04

Wrap each moink ball in two rashers of streaky bacon and barbecue over indirect heat at approximately 150 °C for 30 minutes with the lid closed.

  5. 05

For the barbecue sauce, caramelise the brown sugar, then deglaze with the cider vinegar. Add the ketchup, Worcestershire sauce, sugar beet syrup, mustard, hot pepper sauce and bay leaf in turn. Stir in 1 tbsp (for 20 servings) of the homemade barbecue spice mix and simmer gently for approximately 5 minutes, until thickened.

  6. 06

Dip the moink balls in the homemade barbecue sauce and barbecue for a further 15 minutes, until the sauce forms a glaze. Remove from the barbecue and serve.

  7. 07

Leave the remaining barbecue sauce to cool, transfer to a clean screw-top jar and keep refrigerated.
