STEP BY STEP

Let's make something delicious.

  1. 01

Hard-boil the eggs in a saucepan with enough water to cover them for 8-10 minutes. Drain, cool under cold water, peel and slice. Wash the tomatoes, remove the stalk cores and cut into thin slices. Wash the lettuce leaves, pat dry and cut into wide strips.

  2. 02

Fry the streaky bacon in a non-stick frying pan without additional oil over a medium heat until the fat has rendered. Set aside. Add the olive oil to the hot bacon fat and fry the chicken breast fillet until golden brown all over. Remove from the pan, leave to cool briefly and cut into thin slices.

  3. 03

Toast the sandwich bread on a medium setting in the toaster. Mix the mayonnaise and mustard, then season with salt and pepper. Spread 8 slices of toast with the mayonnaise and mustard mixture and top with lettuce strips. Add chicken breast to 4 of these slices. Top with the other 4 prepared slices, with the lettuce side facing upwards. Add the tomatoes, eggs and 3 rashers of bacon to each sandwich. Season with more pepper, if liked.

  4. 04

Finish with the remaining 4 slices of toast. Secure the club sandwiches with skewers, cut diagonally in half and serve.
