Yeasted bagels with a savoury topping, filled with cream cheese, frisée lettuce, avocado, tomatoes and colourful striped beetroot.
STEP BY STEP
Mix the sugar, 320 ml warm water and yeast and leave to ferment for about 10 minutes.
Put the flour and salt in a bowl. Add the yeast mixture and work everything into a smooth dough. Transfer the dough to an oiled bowl and leave to rise for about 1 hour.
Wash and peel the striped beetroot, then cut into thin slices. Leave to marinate with the salt and sugar for 45 minutes.
Slice the tomatoes. Wash and pick over the lettuce.
Divide the dough into 8 equal pieces, roll into balls and leave to rise for 10 minutes. Make a hole in the centre of each ball with your finger or the handle of a wooden spoon, then leave to rise for another 10 minutes.
Bring water to the boil in a large saucepan and boil the bagels for 1 minute on each side.
For the topping, mix the garlic flakes, onion flakes, white and black sesame seeds, poppy seeds and salt. Beat the egg in a bowl.
Place the bagels on a baking tray lined with baking paper, brush with the beaten egg and sprinkle with the topping. Bake on the lowest shelf of a preheated oven at 250 °C using top and bottom heat for about 15-20 minutes.
Remove the stones from the avocados and cut into slices.
Remove the bagels from the oven and leave to cool. Slice in half lengthways, spread with cream cheese and fill with lettuce, tomato slices, striped beetroot and avocado slices.
