STEP BY STEP

Let's make something delicious.

  1. 01

Preheat the oven to 80–90 °C fan and have a roasting bag ready.

  2. 02

Using a sharp knife, cut the beef into fillet steaks at least 2 cm thick. Leave at room temperature for 30 minutes.

  3. 03

Place the fillet steaks in the roasting bag. Add the garlic cloves, rosemary sprig and olive oil, then seal the bag. Cook on the oven rack for about 20 minutes.

  4. 04

Heat a heavy frying pan, preferably cast iron, on the hob. Add the sunflower oil and wait until it is hot enough.

  5. 05

Place the fillet steaks side by side in the pan of hot oil and sear the first side over a high heat for about 1 minute.

  6. 06

Turn the fillet steaks with a spatula and fry the second side for about 1 minute as well, depending on their thickness.

  7. 07

Remove the fillet steaks from the pan, place on plates and season with salt and pepper. Leave to rest for 1 minute, then serve.
