STEP BY STEP

Let's make something delicious.

  1. 01

Put 250 ml water and the currant nectar into a sufficiently large saucepan and heat. Add 600 g of the berries and bring to the boil. Reduce the heat and simmer for 5 minutes. Remove the pan from the heat, cover and leave to infuse for 10 minutes.

  2. 02

Press the fruit through a sieve, squeezing it well and collecting the juice. Top up the juice with water or fruit nectar to make 1 litre. Add the sugar and bring to the boil.

  3. 03

Mix the cornflour with cold water and add it to the pan. Bring briefly to the boil, stirring, then leave to cool until lukewarm.

  4. 04

Stir in the remaining berries and chill in the fridge until completely cold.

  5. 05

Tip: The dessert has a fairly runny consistency. For a firmer result, use 40 g cornflour per 1 litre of liquid. Add a little more sugar to taste if needed.
