STEP BY STEP

Let's make something delicious.

  1. 01

Trim the fennel and set aside the tender fronds. Finely slice the bulbs, brush with olive oil and sprinkle with salt. Briefly cook on the barbecue until lightly coloured on both sides. Then cut out the woody core.

  2. 02

Place the sausages on the barbecue and cook over a medium heat for about 5 minutes, turning them regularly. Wash the rocket, spin dry and roughly tear any larger leaves. Stone the apricots and cut into wedges.

  3. 03

Mix the lemon juice with the remaining olive oil and season with salt, pepper and 1 pinch of sugar. Place the fennel, fennel fronds, rocket and apricots in a bowl and toss with the dressing.

  4. 04

Cut open the focaccia and briefly toast it cut-side down on the barbecue. Rub the toasted surface with the cut side of the garlic clove and drizzle with the lemon olive oil.

  5. 05

Serve the salsiccia sausages with the salad and bread.
