STEP BY STEP

Let's make something delicious.

  1. 01

Finely dice the pancetta and fry in a frying pan until the fat has rendered and the pancetta is crisp.

  2. 02

Finely grate the cheese. Whisk half the cheese with the cream, eggs, lemon zest, salt, pepper and nutmeg.

  3. 03

Cook the spaghetti in plenty of boiling salted water according to the packet instructions until al dente. Finely chop the parsley. Reheat the pancetta in the frying pan.

  4. 04

Drain the spaghetti and, while still dripping wet, add to the pan with the pancetta and the egg and cream mixture. Warm over a very low heat until the egg and cream mixture becomes slightly creamy. Remove from the heat immediately and fold in the parsley.

  5. 05

Grate the remaining cheese over the spaghetti and serve immediately.
