STEP BY STEP

Let's make something delicious.

  1. 01

Peel and finely dice the shallots and garlic. Trim or peel the carrots, celery and leek as appropriate, then dice very finely.

  2. 02

Heat the olive oil in a large saucepan. Add the beef mince and brown over a high heat, stirring as little as possible. Add the vegetables, shallots and garlic and fry until lightly browned. Add the tomato purée and cook briefly.

  3. 03

Deglaze with the beef stock. Add the passata, salt, pepper, maple syrup and oregano.

  4. 04

Bring to the boil, reduce the heat and simmer the sauce, covered, for about 45 minutes. Taste and adjust the seasoning if needed.

  5. 05

Cook the spaghetti in boiling salted water for 8-10 minutes until cooked to your liking. Lift out of the cooking water and transfer to a frying pan. Add about a ladleful of the pasta cooking water and the sauce. Toss everything together.

  6. 06

Grate the Parmesan and set aside. Finely chop the parsley and basil.

  7. 07

Arrange the spaghetti Bolognese on plates and garnish with parsley and basil as desired. Finish with the grated Parmesan and a few splashes of olive oil.
