STEP BY STEP

Let's make something delicious.

  1. 01

Wash the cucumbers and, if desired, cut off a few thin slices for garnishing. Peel and roughly chop the remaining cucumbers. Peel and roughly chop the garlic. Wash the dill, shake dry and finely chop. Wash the lime and pat dry. Grate off about 2 tsp of zest, then squeeze the lime.

  2. 02

Put the cucumbers, garlic, lime zest and juice, yoghurt and 500 ml ice-cold water into a blender or saucepan and purée thoroughly. Add the olive oil and white wine vinegar and purée again. Season to taste with salt, pepper and a pinch of sugar.

  3. 03

Stir the dill into the cold soup and chill again in the fridge if needed. Roughly chop the walnuts.

  4. 04

Pour the tarator into serving bowls and top with the chopped walnuts and cucumber slices, if using. Garnish with fresh mint or parsley, if desired, and serve.
